Summer Zucchini Fritters with Fresh Chive Quark

These crispy pan-fried fritters are a wonderful way to use up the summer zucchini harvest. The finely grated zucchini makes the inside of the fritters incredibly juicy and tender, a texture that many children from the age of three enjoy. Paired with a cool, protein-rich quark mixed with fresh garden chives, this meal offers great energy for active afternoons.

Ingredients (for 2 to 3 portions)

  • 400 g zucchini (organic preferred)
  • 1 small onion
  • 2 eggs
  • 4 tablespoons spelt flour (or all-purpose flour)
  • 1 pinch of mild paprika
  • A little canola oil for frying
  • 200 g quark (or thick Greek yogurt)
  • 2 tablespoons plain yogurt
  • 1 small bunch of fresh chives
  • A splash of lemon juice

Preparation

  1. Wash the zucchini, trim the ends, and grate the vegetable finely using a box grater.
  2. Place the grated zucchini in a clean kitchen towel and squeeze out the excess liquid firmly so the batter binds well later.
  3. Dice the onion very finely and mix it into the zucchini along with the eggs, spelt flour, and paprika until you have a smooth, even batter.
  4. Heat a little canola oil in a non-stick pan over medium heat.
  5. Spoon one tablespoon of the batter per fritter into the pan, press down gently, and fry on both sides for about three to four minutes until golden brown.
  6. While the fritters are cooking, chop the chives into fine rings and stir them into the quark, plain yogurt, and a splash of lemon juice until smooth.
  7. Let the finished fritters drain on a piece of paper towel and allow them to cool down well before serving. Always check the temperature before your child takes the first bite.

Variations and Tips

  • Swap the veggies: You can replace half of the zucchini with finely grated carrots or sweet potatoes to introduce new colors and flavors.
  • Storage: The fritters keep well in an airtight container in the fridge for up to two days. They also freeze beautifully and can be reheated in the oven when needed.
  • Texture adjustments: For children who are sensitive to textures, you can skip the onion or pulse the batter briefly in a food processor before frying.
  • For the whole family: Adults can season their portion of the quark dip with a little garlic, black pepper, and a pinch of salt to taste.
