Introduction
A traditional summer cake that beautifully balances the tartness of fresh redcurrants with a sweet, airy meringue topping. Ingredients
For a small springform pan (approx. 18 cm diameter, yields 3 to 4 generous child portions):
Shortcrust Pastry:
- 100 g spelt flour (type 630 or all-purpose)
- 30 g soft butter
- 1 tbsp agave syrup or fine raw cane sugar
- 1 egg yolk
- 1 tbsp cold water
Filling and Meringue:
- 150 g fresh redcurrants
- 1 egg white
- 30 g fine raw cane sugar
- 1 tsp finely ground almonds
Preparation
- Preheat the oven to 180 degrees Celsius (standard top and bottom heat).
- Quickly knead the flour, butter, agave syrup, egg yolk, and water into a smooth dough.
- Press the dough into a small, greased springform pan (18 cm), pulling it up slightly at the edges.
- Pre-bake the crust in the oven for about 10 minutes.
- Meanwhile, wash the redcurrants, drain them well, and carefully strip them from the stems.
- Beat the egg white until stiff, slowly pouring in the sugar until a glossy, firm mixture forms.
- Gently fold the finely ground almonds and the redcurrants into the beaten egg whites.
- Spread the meringue mixture evenly over the pre-baked crust.
- Bake the cake for another 15 to 20 minutes until the meringue is lightly golden brown.
- Let the cake cool completely and always check the temperature before serving, as the fruit inside stays hot for a long time.
Variations & Tips
- Different Fruit: Instead of redcurrants, blueberries or finely chopped strawberries work wonderfully for this recipe.
- Storage: The cake will keep covered in the refrigerator for about two days. Freezing is not recommended because the meringue becomes soggy after thawing.
- Family Tip: For adults, you can double the ingredients for a larger pan and add a little vanilla bean paste to the dough.
