Colorful Veggie Muffins with Peas and Corn for Little Bakers
Introduction
Baking together brings great joy to many children aged three and older. These savory vegetable muffins with peas and corn are a wonderful recipe for practicing fine motor skills while stirring. At the same time, your little helpers get to know colorful vegetables in a playful way.
Ingredients
Makes about 6 to 8 muffins (roughly 2 to 3 portions):
- 150 g spelt flour (or all-purpose flour)
- 1 tsp baking powder
- 2 eggs (organic if possible)
- 50 ml canola oil or mild olive oil
- 80 ml milk (or an unsweetened plant-based alternative)
- 50 g canned corn (drained)
- 50 g frozen peas (thawed)
- 50 g grated cheese (such as mild cheddar or gouda)
- 1 pinch of salt and a little mild paprika
Preparation
- Preheat the oven to 180 degrees Celsius (standard top and bottom heat). Line a muffin tin with paper liners or grease it well.
- Mix the flour and baking powder in a mixing bowl. Your child can easily help with this using a spoon.
- In a second bowl, whisk the eggs, oil, and milk until a smooth liquid forms. Quickly stir this mixture into the dry ingredients.
- Gently fold the corn, peas, and grated cheese into the batter. Add the spices and mix everything briefly.
- Distribute the batter evenly among the muffin cups. Bake in the preheated oven for about 20 to 25 minutes until golden brown.
- Remove the muffins from the oven and let them cool completely on a wire rack. Always check the temperature inside before eating to ensure it is safe.
Variations & Tips
- Swap the veggies: Instead of peas and corn, small bell pepper cubes or grated carrots work beautifully in the batter.
- Storage: The muffins stay fresh in an airtight container in the fridge for about two to three days. They also freeze wonderfully and can be thawed individually as needed.
- Adjusting texture: For younger siblings, you can lightly puree or finely chop the vegetables beforehand.
- Family tip: Parents can enjoy their own muffins with a savory herb dip or a little chili sauce on the side.
Allergy & Safety Notes
This recipe contains eggs, milk (dairy), and wheat or spelt (gluten). These are among the most common allergens. Always introduce new ingredients one at a time and in small amounts to easily observe any potential reactions. If using nuts in the household, remember to only use them finely ground for young children due to the choking hazard. If you have any uncertainties about diet or introducing new foods, it is always best to consult your pediatrician.
Nutritional Note
Peas and corn provide valuable fiber that supports healthy digestion. The spelt flour and eggs offer long-lasting energy and important proteins for growth. Especially during this active phase, a colorful, nutrient-rich meal is a great addition to your daily routine.
