Creamy Chicken Fricassee with Peas, Carrots, and Rice
Introduction
This creamy chicken fricassee is a wonderful family meal that many children enjoy thanks to its mild flavor and sweet vegetables. It provides valuable energy for active explorers and supports a balanced diet with its combination of tender meat and nutritious veggies. The soft texture makes it a comforting dish that little ones and grown-ups love to share at the dinner table.
Ingredients
- 150 g rice (such as basmati or brown rice, organic if possible)
- 250 g chicken breast fillet (organic recommended)
- 1 small onion
- 150 g carrots
- 100 g frozen peas
- 2 tbsp butter
- 2 tbsp wheat flour
- 300 ml mild vegetable broth (low sodium)
- 50 ml heavy cream (or oat cream)
- 1 tsp fresh or frozen parsley
- A small pinch of black pepper (optional)
Preparation
- Cook the rice in plenty of water according to the package instructions until soft.
- Wash the chicken breast, pat it dry, and cut it into small, bite-sized cubes.
- Peel and finely dice the onion, then peel the carrots and cut them into thin slices.
- Heat 1 tablespoon of butter in a pan over medium heat and sauté the chicken until it is completely cooked through.
- Remove the meat from the pan and sauté the onion and carrots in the remaining tablespoon of butter.
- Sprinkle the flour over the vegetables, stir briefly, and quickly pour in the vegetable broth while stirring constantly to prevent lumps.
- Let the sauce simmer gently for about 10 minutes until the carrots are soft and the liquid thickens into a smooth cream.
- Add the peas, the cream, and the fully cooked chicken back into the sauce, heating everything together for another 3 minutes.
- Season gently with parsley and a tiny hint of pepper if desired.
- Allow the dish to cool down well before serving, always checking the temperature to ensure your child does not burn their mouth.
Variations and Tips
- Swap the veggies: Instead of peas and carrots, small broccoli florets or tender asparagus pieces work beautifully in this mild sauce.
- Storage: Leftovers keep well in the fridge for up to two days when covered, and the sauce freezes excellently. It is best to freeze the fricassee in small portions without the rice.
- Adjusting texture: For children who are still practicing chewing larger pieces, you can easily shred the cooked chicken with a fork before mixing it into the sauce.
- For the parents: Adults can easily boost the flavor of their own portions at the table with a pinch of salt, a squeeze of lemon juice, or a few capers.

Please note that honey is strictly unsafe for children under 12 months due to the risk of botulism. Nuts also pose a choking hazard and may only be offered finely ground or as a smooth butter during the early years. If you have any uncertainties about introducing solid foods or your child's diet, please consult your pediatrician.
