
Crispy Spinach and Feta Puff Pastry Pockets to Bake Together

Introduction
These crispy puff pastry pockets with a mild spinach and feta filling are wonderful for baking together with children from three years of age. Kneading, filling, and folding the dough playfully supports fine motor skills. A savory snack that not only tastes great but also fits perfectly into little hands.
Ingredients
- 1 roll of fresh puff pastry (approx. 275 g, preferably from the refrigerated section)
- 250 g fresh spinach (or thawed frozen spinach)
- 100 g feta cheese (made from pasteurized milk)
- 1 tablespoon olive oil
- 1 small onion
- 1 egg (for egg wash)
- A pinch of nutmeg and a little black pepper
Preparation
- Preheat the oven to 200 degrees Celsius (top and bottom heat) and line a baking sheet with parchment paper.
- Finely dice the onion and sauté it in a pan with the olive oil until translucent.
- Add the washed fresh spinach and let it wilt for about 5 minutes until the liquid has evaporated. (If using frozen spinach, make sure to drain it well).
- Transfer the spinach mixture to a bowl, crumble the feta finely over it with your hands, and season everything with nutmeg and pepper.
- Roll out the puff pastry and cut it into even, hand-sized squares.
- Place a tablespoon of the filling in the center of each square, fold the dough over to form triangles, and press the edges firmly together with a fork.
- Brush the pockets with the beaten egg and bake for about 15 to 20 minutes until golden brown.
- Allow to cool thoroughly before serving and check the temperature of the filling, as it gets very hot on the inside.
Variations & Tips
- Swap the veggies: The spinach can easily be replaced with finely grated carrots or zucchini.
- Storage: The baked pockets keep for about two days in the fridge in an airtight container. They also freeze exceptionally well and can be reheated in the oven when needed.
- For the whole family: Adults can spice up their own pockets with a little garlic or chili flakes.
- Adjusting the texture: For children who are not yet fond of chunky textures, the spinach and feta mixture can be briefly pureed before filling.
