Ingredients

  • 1 tablespoon olive oil
  • 1 small mild onion
  • 1 pinch of nutmeg
  • A splash of milk for brushing

Preparation

  1. Preheat the oven to 200 degrees Celsius (top and bottom heat) and line a baking sheet with parchment paper.
  2. Finely dice the onion and chop the washed spinach into small, bite-sized pieces.
  3. Heat the olive oil in a pan and sauté the diced onion until translucent. Add the spinach and cook for about three minutes until it wilts.
  4. Transfer the spinach mixture to a bowl and let it cool slightly. Crumble the feta cheese finely over the top, stir in a pinch of nutmeg, and mix everything well.
  5. Roll out the puff pastry and cut it into six equal squares. Place one tablespoon of the filling in the center of each square.
  6. Moisten the edges of the pastry with a little water, fold them into triangles, and press the edges firmly together with a fork.
  7. Place the pockets on the baking sheet, brush them with a little milk, and bake in the oven for about 15 to 20 minutes until golden brown.
  8. Allow them to cool thoroughly before serving, and always check the temperature inside the pockets to prevent burns.

Variations and Tips

  • Swap the vegetables: Instead of spinach, finely grated zucchini or mild carrots work wonderfully for the filling.
  • Storage: The baked pockets keep for about two days in the refrigerator and taste delicious cold. Unbaked pockets can be easily frozen and popped straight into the oven when needed.
  • For the whole family: Parents can elevate their own portions by adding a little garlic, black pepper, or toasted pine nuts to the filling.
  • Adjusting the texture: For children who are still unsure about chunky textures, you can briefly blend the spinach and cheese mixture before filling the pastry.
