Ingredients

  • 200 g spelt flour (light or wholemeal, organic if possible)
  • 125 g quark (or plain Greek yogurt)
  • 40 ml neutral vegetable oil (like canola oil)
  • 40 ml milk (cow's milk or plant-based alternative)
  • 1 tsp baking powder
  • 50 g soft, unsulfured dried apricots
  • 1 tsp honey or maple syrup (optional)

Preparation

  1. Preheat the oven to 180 degrees Celsius (standard bake) and line a baking sheet with parchment paper.
  2. Cut the dried apricots into very fine, soft pieces.
  3. Mix the flour and baking powder together in a large bowl.
  4. Add the quark, oil, milk, and optional honey, then quickly knead everything into a smooth dough.
  5. Gently fold the apricot pieces into the mixture until evenly distributed.
  6. Flatten the dough with your hands on a lightly floured surface until it is about two centimeters thick.
  7. Cut out small scones using cookie cutters and place them on the baking sheet with some space in between.
  8. Bake in the preheated oven for about 15 minutes until golden brown.
  9. Let the scones cool completely and check the temperature inside before serving to your child.

  • Fruity switch: You can easily swap the apricots for soft raisins or finely chopped dried plums.
