Mild Chili con Carne with Corn, Beans, and Rice for the Family

This mild chili con carne brings color and variety to the family table. It is especially great for children aged three and up, as the soft beans and sweet corn invite them to chew and explore. At the same time, the meal provides valuable energy for active afternoons.

Ingredients

  • 250 g minced beef (organic preferred)
  • 1 small onion
  • 1 tbsp canola oil or olive oil
  • 200 g chopped tomatoes (canned)
  • 100 g kidney beans (canned, rinsed well)
  • 100 g sweet corn (canned, unsweetened)
  • 1 tsp sweet paprika powder
  • 0.5 tsp ground cumin
  • 1 pinch of salt
  • 100 g rice (e.g., basmati or parboiled)

Preparation

  1. Cook the rice according to the package instructions in lightly salted water until soft.
  2. Peel the onion and chop it into very fine cubes.
  3. Heat the oil in a pot, sauté the onion until translucent, and add the minced meat. Fry everything well until the meat is completely cooked through.
  4. Stir in the paprika powder and cumin, frying briefly to release the flavors.
  5. Add the chopped tomatoes, rinsed kidney beans, and corn. Mix everything well and let it simmer gently over medium heat for about 10 to 15 minutes.
  6. Season the chili with a small pinch of salt. Let it cool down well before serving and check the temperature to ensure your child does not burn their mouth.

Variations & Tips

  • Vegetarian alternative: Simply replace the minced meat with red lentils or a plant-based meat alternative.
  • For the parents: Scoop out a portion for your child, then spice up the rest in the pot with chili flakes or hot sauce.
  • Storage: The chili keeps well in an airtight container in the fridge for about two days. It also freezes wonderfully and can be thawed in handy portions.
  • Adjusting texture: If your child is not quite used to whole beans yet, you can lightly mash them with a fork before stirring them in.
