
Savory Whole-Wheat Pancakes with Ham and Cheese for Families
Introduction

Ingredients
- 150 g whole-wheat spelt flour
- 300 ml whole milk (or plant-based alternative)
- 2 eggs (medium size)
- 1 pinch of salt
- 1 tsp canola oil or cooking oil for the pan
- 100 g cooked ham (finely sliced or diced)
- 100 g grated Gouda cheese
- Optional: 1 fresh tomato, cut into thin slices
Preparation
- Whisk the flour, milk, eggs, and a pinch of salt in a bowl until a smooth, creamy batter forms. Let the batter rest for about 10 minutes.
- Heat a little oil in a non-stick pan over medium heat. Pour in a small ladle of batter and spread it evenly.
- Cook the pancake until golden brown on one side. Then flip it and immediately sprinkle some ham and a handful of Gouda onto one half of the pancake.
- If you like, place one or two tomato slices on top of the cheese. Fold the pancake in half to create a half-moon shape.
- Leave the folded pancake in the pan over low heat for another one to two minutes until the cheese is completely melted.
- Let it cool briefly before serving, and always do a temperature test, as the melted cheese inside can be very hot.

- Veggie Boost: Finely grate half a carrot or zucchini and mix it directly into the batter.
- Vegetarian Version: Simply leave out the ham and use thinly sliced mushrooms or some sweet corn instead.
- Storage: Leftover, unfilled pancakes will keep in the fridge for up to two days when covered. They also freeze wonderfully. Just place a piece of parchment paper between each pancake.
