Ingredients
- 250 g white asparagus (preferably organic)
- 200 g fresh strawberries
- 150 g halloumi cheese
- 2 tbsp mild olive oil
- 1 tbsp white balsamic vinegar
- 1 tsp maple syrup or agave nectar
- A few fresh basil leaves
- A small pinch of black pepper
Preparation
- Peel the white asparagus thoroughly and cut off the woody ends. Slice the spears into bite-sized pieces, about two centimeters long.
- Cook the asparagus in a pot of boiling water for about 10 to 12 minutes until tender. Drain the water and let the pieces cool slightly.
- Wash the strawberries, remove the green tops, and cut them into small quarters. Cut the halloumi into small, child-friendly cubes as well.
- Heat 1 tbsp of olive oil in a pan and fry the halloumi cubes over medium heat until golden brown on all sides. This usually takes about 4 to 5 minutes.
- For the dressing, whisk together the remaining olive oil, balsamic vinegar, and maple syrup. Gently mix the asparagus, strawberries, and warm halloumi in a bowl with the dressing.
- Garnish with a little pepper and finely chopped basil. Always check the temperature before serving, as the cheese is often still very hot inside.
Variations & Tips
- Vegetable swap: Green asparagus is a great alternative and does not need to be peeled.
- Storage: The salad will keep in the fridge for about one day. Freezing is not recommended for this recipe, as the strawberries and asparagus will become mushy.
- Texture adjustment: For younger siblings, you can cook the asparagus even softer and cut the cheese into tiny pieces.
- Family tip: For adults, the salad can be wonderfully enhanced with some arugula and toasted pine nuts.
