Whole Wheat Spaghetti with Hidden Veggie Bolognese

Ingredients

For 2 to 3 portions:

  • 150g whole wheat spaghetti (organic if possible)
  • 1 small onion
  • 1 garlic clove
  • 1 medium carrot
  • 50g celeriac (celery root)
  • 2 tbsp olive oil
  • 200g ground beef (or red lentils as an alternative)
  • 400g crushed tomatoes
  • 1 tsp dried oregano
  • A small pinch of salt and mild black pepper
  • A little grated cheese (like Parmesan or Gouda)

Preparation

  1. Prepare vegetables: Peel the onion, garlic, carrot, and celeriac, then cut them into rough chunks.
  2. Puree: Pulse the vegetables in a food processor or with a hand blender until very fine.
  3. Sauté: Heat the olive oil in a large pan over medium heat and gently sauté the vegetable mix for about 5 minutes.
  4. Add meat: Stir in the ground beef and cook thoroughly until lightly browned.
  5. Simmer sauce: Pour in the crushed tomatoes and oregano. Let the sauce simmer gently on low heat for about 15 minutes until thick.
  6. Cook pasta: Meanwhile, cook the whole wheat spaghetti in lightly salted water according to the package instructions.
  7. Serve: Drain the pasta and mix it directly in the pan with the warm sauce. Let the meal cool down slightly and always check the temperature before serving to ensure it is safe to eat.

Variations and Tips

  • Vegetarian option: Simply swap the ground beef for 100g of rinsed red lentils and add a splash of water while simmering.
  • Storage: The sauce keeps well in an airtight container in the fridge for up to two days. It also freezes beautifully and lasts for up to three months.
  • Adjusting texture: Many children prefer completely smooth sauces. If so, you can blend the finished bolognese once more before mixing it with the pasta.
  • Fresh herbs: Sprinkling a little finely chopped parsley over the finished dish adds extra freshness and vitamins.
  • Family tip: Parents can easily spice up their own portions at the table with chili flakes, extra garlic, or fresh basil.
