Clear Chicken Soup with Alphabet Noodles and Mild Root Vegetables

A warming soup feels incredibly comforting, especially on chilly days. The fun alphabet noodles motivate children to eat, while soft-cooked carrots provide valuable vitamins. This recipe is mildly seasoned and perfect for the whole family to enjoy a cozy meal together.

Ingredients

  • 500 ml mild chicken broth (homemade or low-sodium preferred)
  • 150 g chicken breast fillet (organic if possible)
  • 2 medium carrots (approx. 150 g)
  • 1 small piece of celeriac (approx. 50 g)
  • 50 g alphabet noodles
  • 1 tbsp fresh parsley (chopped)
  • 1 pinch of mild salt (use sparingly for children over 3)

Preparation

  1. Wash, peel, and dice the carrots and celeriac into very small cubes. Rinse the chicken breast under running water, pat dry, and cut into fine, bite-sized pieces.
  2. Bring the chicken broth to a boil in a medium-sized pot. Carefully add the prepared vegetables and chicken pieces to the boiling broth.
  3. Reduce the heat and let everything simmer gently at a medium temperature for about 15 minutes, until the meat is fully cooked and the vegetables are soft.
  4. Stir in the alphabet noodles and cook according to the package instructions (usually 5 to 8 minutes) until they are tender.
  5. Remove the soup from the stove, stir in the fresh parsley, and season mildly with a small pinch of salt.
  6. Let the soup cool down well before serving, and always test the temperature to ensure your child does not burn their mouth.

Variations and Tips

  • Vegetable swap: You can also simmer small broccoli florets or peas during the last few minutes of cooking.
  • Storage: The soup keeps well in an airtight container in the fridge for up to two days. It freezes well, but ideally without the noodles, as they become very mushy when thawed.
  • For the parents: Adults can easily season their own portions at the table with more salt, pepper, or a pinch of chili flakes.
  • Texture adjustment: For younger siblings, you can gently mash or puree the vegetables and meat before adding the noodles.
